Outside of Kansas City fans & failed bettors, is there anyone that’s upset with yesterday’s beatdown? I only wish that it had been a shutout. I was an Eagles fan for a day as I’m guessing most of the world was.

All done. Cooler and attempted to vacuum seal but our sealer bit the dust today. Have to pick up a new one tomorrow to finish up….. Started with 8lbs of meat. Finished with 5lbs after smoking. Meat $53. Seasoning $8. Pellets $4

30 more minutes. Tried a small, thinner slice. Perfection.

I don’t take much with me. I’d probably go right through it if I did. Make it mostly for an occasional treat of flavor. It is good stuff

About four hours.

In a little under 48 hrs from now, once the seasoning settles in, it’ll be time to smoke.

Moved on to preparing some jerky meat. 8lbs of Flank Steak and Eye of Round combined. Getting ready to marinade.

Yes, I’m home till Tuesday. No party though except for my wife and I. No dog in the fight for this game but I’ll be rooting the Eagles on. Knocking things off of the honey do list. Installed a new beverage fridge behind the bar last night. Had to dismantle the bar to get the fridge in place...
