I've made collard greens with ham hocks, and they were pretty good. How are you fixing the potatoes? Why are you so worried?! :D

oh yeah collard greens with ham hocks..saw that on tv last week, they actually looked good..........but hope tonights menu is just as good.........or it is pb&j..for me..................just kidding.


putting the potatoes in with the mustard greens........so we will see, and will let you know...........:D
 
Hmm, sounds like a southern version of corned beef and cabbage, except with pork. Could be decent.

It's still not cold enough for food like that, IMO. It needs to have snowed at least once before I'll make something stewed liked that.

Meanwhile, I'm making a blowout chili for Sunday! :p

hmmmmmmmm chili...................don't forget the pictures of it..LOVE CHILI................what else? corn bread?
 
Oh yeah, cornbread is a good idea! Didn't know what the heck I was going to serve with it, besides Fritos, sour cream, cheddar cheese, onions, and jalapeno. And, since I need some pipecleaner material, a salad as well. :p

BTW, I'm stealing a lot of HS's ideas. I bought 3/4 beef, 1/4 pork, and will chop it by hand. Strangely enough for my neighborhood, I couldn't find any quality chili powder, so I also bought two different varieties of dried chilies, and plan on roasting then grinding them. Ditto for the cumin seeds. I may or may not use instant espresso instead of water. Got the darkest kidney beans they had. (I had no idea until today that Goya made two different shades of red!) Should be a lot of work. My kind of project!!

I grew up on southern cooking................dad's side of the family all from alabama, tennesee........love it.............well most..
still won't eat that slimey..yucky OKRA..............:(
