Buckaroo..here is your rum cake recipe..

Bacardi Rum Cake

Makes one 10 in tube cake

1 cup pecans or walnuts, chopped
1 (18 1/2-ounce) package yellow cake mix
1 (3 3/4-ounce) package instant vanilla pudding
4 eggs
1/2-cup water, cold
1/2 cup Wesson Oil
1/2 cup Bacardi dark rum -- 80 proof

Glaze:
1/4 lb butter
1/4-cup water
1 cup granulated sugar
1/2 cup Bacardi dark rum, 80 proof

Preheat over to 325. Grease and flour 10-inch tube or 12 cup
Bundt pan. Sprinkle nuts over bottom of the pan. Mix all cake
ingredients together. Pour batter over nuts. Bake 1 hour. Cool.
Invert on serving platter and prick top. Drizzle and smooth glaze
evenly over top and sides of cake. Allow cake to absorb glaze.
Repeat.
 
That's similar to the one I sent him. I don't use the vanilla pudding,though. And I use light rum instead of dark.

But this one goes in my recipe box. Will try it next. :)

I know, the one I have made (years ago) didn't have the pudding in it either........but who knows might be good though.......
once my MIL made it and drenched it in rum...she just kept adding to it.....everyday, needless to say, that was one drunken cake..it was pretty powerful.......could hardly even eat it.......just wring it out in the glass..hahahhaa:D :D
 
Thanks girls, ooops, I mean ladies (jeez, you should have seen the way I first spelled ladies...you'd have slapped me silly!:) ) I'm going to attempt to make the cake tomorrow, if I get the chance. Got lots to do and another movie to watch with the Mrs. :D
 
CB, I USED to make Rum cake from memory, ingrained from my Nana.

It may be similar to TRL's, but I can't find my recipie box (dammit).
I started adding the pudding mix and using Duncan Hines cake mix in the late '70s, and prefer Dark Bacardi unless you would prefer a little extra flavor. Captain Morgan is wonderful for Rum Cake!

Whatever, it has to be better that that dang FRUITCAKE!

Speaking of that Fruitcake, did you know that there is really only one of those things in the world? Yeah, and everybody just keeps passing it on to the next person. Jeez, I've had it dozens of times. I thought the paper boy would keep it, but I'll be darned if I didn't get it back the next year. How many times have you gotten it? Did you see my name on it. I put it there in very small writing in the lower left hand front. :)

If you get one with a kitty paw print right under the address, that means I rejected it and said "RETURN TO SENDER"!

Are you the ones they make these things for? Have you ever been hit with one of them? I'm tellin you it will raise quit a welt!
