Anyone have a really good chicken salad recipe? I'm looking for one that is fairly traditional (chicken, mayo, etc.) to make sandwiches with but probably has that special ingredient that makes it especially good. Thanks :)

I have one but it's quite involved. It calls for brining an entire bird in seasoned water for approx. 8 hrs., then baking, stuffed with apples and onions. The result is very moist seasoned meat.
What you add to it afterwards is up to you (I usually add mayo, brown mustard, celery, small amount of fresh salsa, the apples from inside the bird, diced up, small amount of the onions from the bird minced up, etc.)
 
I just use white chunk chicken, minced onion and a little bit of garlic powder. Instead of mayo, I use ranch dressing. It's yummy!!!

Yummy!!! I love chicken salad, but hardly ever make it. I really should since we always have left-over chicken since we eat it so often. I just never think to do it.
 
One thing I've found that makes great chicken salad is this. We often get the rotisseree chickens from Sam's club. They're only about $5, fulley cooked, and we alsways have anough left to make chicken salad. Heck, sometimes we even just buy a chicken for salad. It's really not that much more than a can.
