Cookie Recipe?

I'm going to a Holiday Cookie Exchange Party in a couple of weeks. We need to bring 6 dozen cookies and the recipe. We are asked not to bring chocolate chip unless they are something really special. So...anyone have a favorite recipe they'd like to share? Something fun and unique? I plan to read through Kat's Kitchen Korner when I have more time. Thanks in advance for your ideas.
 
Pecan Sandies

1 cup butter
1/4 cup powdered sugar (you will need additional sugar later)
1 teaspoons vanilla
1 Tablespoon water
2 cups flour
1 cup chopped pecans

Preheat oven --- 350

Cream butter and sugar
Add vanilla, water, and flour. Mix well.
Add pecans. Mix well.
Form small balls - then flatten slightly
Bake 15 minutes. Should be golden brown.

While hot, roll in powdered sugar. Then roll again when cool.
 
My wife has a great pumpkin cookie recipe that always gets tons of compliments anytime she takes them anywhere. She also gets requests for them, mostly from co-workers, on a regular basis.

My mom has taken a pumpkin cookie recipe and subs sweet potato instead. It has walnuts and raisins in the recipe. It is absolutely my favorite cookie. Which is especially interesting since I don't like sweet potatos in any other form.
 
Pumpkin Cookies

makes 8+ dozen

Cookies
1 cup shortening
1 cup margerine
2 cups sugar
2 cups pumpkin (equal to one 15oz can)
2 eggs
2 tsp vanilla
4 cups flour
2 tsp baking powder
2 tsp baking soda
2 tsp cinnamon
1 tsp salt

Prehat oven to 350
cream sugar, shortening and margerine
add pumpkin, eggs and vanilla
mix dry ingredients in separate bowl
add dry ingredients
mix well
drop w/spoon on ungreased cookie sheet
bake 8-10 minutes and ice cookies while warm!

Icing
6 Tbl butter/marg
8 tbl milk
1 cup brown sugar

2 cups powdered sugar
2 tsp vanilla

mix butter/marg, milk and brown sugar in saucepan and bring to boil
boil 2 minutes while stirring constantly
let cool for 1-2 minutes (not cold)
in separate bowl mix contents of saucepan, powdered sugar and vanilla
apply this icing immediately to cookies while they are still warm

enjoy!
 
I just made these...easy and very good


Choco-mint snaps

4 (1-ounce) squares unsweetened chocolate
4 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 1/4 cups vegetable shortening
2 cups sugar
2 large eggs
1/3 cup light corn syrup
2 1/2 tablespoons water
2 teaspoons peppermint extract
1 teaspoon vanilla extract
Additional sugar for rolling

Melt chocolate squares in the top of a double boiler over simmering water; set aside to cool.
Preheat oven to 350 F. In a small bowl whisk together the flour, baking soda and salt; set aside. In a large mixing bowl, using an electric mixer at medium speed, cream the shortening and 2 cups sugar until light and fluffy. Add eggs and blend well. Add reserved chocolate, corn syrup, water, and extracts and blend well. Stir in flour mixture until just blended. Shape dough into 1-inch balls; roll in additional sugar and place about 2-inches apart onto greased baking sheets. Bake for 9 to 11 minutes. Cool a few minutes on baking sheet and transfer to wire racks to cool completely.
