"Crab Melt" (D)

Ingredients:

1.) 4 ounces cooked crabmeat, flaked
2.) 2 tablespoons chopped red bell pepper
3.) 1 medium green onion and top, thinly sliced
4.) 2 tablespoons fat-free mayonnaise
5.) 2 tablespoon fat-free sour cream
6.) 1/4 - 1/2 teaspoon dried dill weed
7.) 1-2 teaspoons lemon juice
8.) Salt and pepper, to taste
9.) 2 slices white, or whole wheat, bread
10) 2 slices (3/4 ounce each) fat-free American cheese

Preparation:

Mix crabmeat, red bell pepper, green onion, mayonnaise, sour cream, and dill weed in small bowl; season to taste with lemon juice, salt, and pepper. Spread on bread slices and top with cheese.
Bake at 400°, or broil, until sandwiches are warm and cheese melted. Yield: 2 Servings.

I'm dot diabetic, but I LOVE this stuff! I don't care for the low fat cheese (and it's not real cheese anyway- mostly oil and water). I use REAL SWISS which I think compliments the crab. Gruyer works for me as well.
