Otherwise known as, "Short Track, Long Chili".
This would have been decent had I not taken Nyquil, fallen asleep without shutting off the gas, and cooked the slop all night long. It was hot as hell last night after cooking for three hours, but was balanced by the coffee, sweet onions, and tomato. This morning, after more than eleven hours of cooking, it lost all its heat and had a faint bitter undertone. I didn't have time to doctor it up, as the race was in its final laps when I finally got to plating. I guess I should be grateful it was edible.
Oh, well. Better luck next time. At least I don't have a stomach ache. Yet. And I think I got a little buzz from the espresso. Thanks for all the tips, HS.!
Maybe I should've tried adding grape jelly this morning.
This Slop I Call Chili
- beef and pork, hand chopped
- bacon
- dark red kidney beans
- onions
- garlic
- bunch of peppers, including chipotle, jalapeno, poblano, and green bell
- roasted cumin seeds, dried Ancho & New Mexico chilis, ground
- whole tomatos, crushed by hand
- some other stuff
Garnish
- diced red onions
- shredded cheddar cheese
- diced jalapenos
- diced tomatoes
- sour cream
- cilantro
Served with Fritos
Maybe I can improve on this when I reheat it next. (As if it needs more cooking.)
