Got it in my head I want to smoke a turkey this year. I know, I know they are hard to light.
I have a ample supply of apple, cherry and pear wood for creating the smoke. Charcoal grille with a side fire box. I've done quite a bit of BBQ, brisket, Boston butts, ribs, etc.
This will be at least a 16 pounder.
Any suggestions greatly appreciated
