Apricot Nectar Cake

1 yellow cake mix
3/4 cup vegetable oil
6 oz. apricot nectar(I buy 12oz can and freeze the rest)
4 egg yolks(save the egg whites)
2 teaspoons lemon extract
1 3oz. package orange Jello

Put all the above ingredients in bowl and mix for 5 minutes at low speed. Beat the egg whites until very stiff, then fold them into the mixture.

Bake in greased/nonstick tube pan, 35-40 minutes at 350. Remove cake while still hot and frost.

Frosting:
Mix lemon juice and powdered sugar to make a thick, but pourable mixture and drizzle in over the cake.

Rum Cake

1/2 cup chopped pecans
1 Duncan Hines Butter Flavor Cake mix
1/2 cup water
1/2 cup oil
1/2 cup rum
4 eggs

Preheat oven to 325. Grease and flour bundt pan --- a nonstick pan will work, too. Put pecans in the bottom. Mix ingredients in order and beat 3 mintues. Pour into pan & bake 45-50 minutes. Remove from oven and glaze while cake is still in the pan.

Glaze:
1/4 lb margarine --- 1 stick
1/4 cup water
1/4 cup rum --- you can be a little generous with this. LOL
1 cup sugar

Put all ingredients in a saucepan & boil 2-3 minutes. Use toothpick or match(I use an icepick) to make holes in cake. Gradually pour over the cake. Let cake sit for 30 minutes, then remove.
 
I'm sure those will be put to good use! And I'm sure my belt will need a new hole added. :lol:

I can personally testify to the greatness of the rum cake. It was a big hit at pot luck I took it to lat year. :D
