1 can (20 oz) pineapple tidbits or chunks
1/2 cup seedless raisins
1/2 cup sliced green onions
2 tsp finely chopped fresh ginger OR 1/2 tsp ground ginger
1 garlic clove, finely chopped
3 cups cooked white or brown rice
2 cups chopped cooked chicken breast (may substitute turkey)
2 tbsp soy sauce
1. Drain pineapple, reserving 4 tbsp juice.
2. Heat 2 tbsp pineapple juice over medium heat in a large nonstick skillet. Add raisins, green onions, ginger and garlic. Cook and stir 3 minutes.
3. Stir in pineapple, rice, chicken, soy sauce and remaining 2 tbsp juice. Cover; reduce heat to low and cook 5 minutes more or until heated through. Garnish with cherry tomatoes and green onions if desired.
