I remember the one about Petty and the Brickyard. I thought it would happen.

I remember a rumor about Tony Stewart doing to one of the Ray Evernham teams in 2001.

Not sure if these count, I think they were done deals that evaporated.

In 1995, Bobby Labonte was going to the Bud Moore 15 car, until the 18 opened up. I still have an old Winston Cup Scene with that article.

Before 1993, Jimmy Spencer was going to the #90 Helig-Myers car. After a few good runs with Bobby Allison 12 team, he decided to stay there. I've even seen pictures of Jimmy with the 90 car.
 
Nike wanted to sponsor Dale Earnhardt

Hendrick wanted Davey Allison bad but Allison wanted to be the top guy of a manufacture something that wouldn't have happened at Chevy due to Earnhardt, which also means Gordon wouldnt have gotten the Hendrick ride

Though Richard Childress hired Mike Skinner Dale wanted Rusty to be his teammate but Rusty wanted to be the top guy

RCR to Dodge after Penske announced their switch to Ford. I wish that one would have happened, Dodge may still be in the sport if it had.
 
Leilani Munter was heavily rumored (although it wasn't made well-known) to take over for Kyle Petty in the #45 part-time once he retired. That came about due to Kyle's sports car racing stuff he did on the side once in a while...he had connections over there with Munter and other drivers who raced in Indycar.
 
In all seriousness I'm pretty sure Smoke almost went to Ganassi after the 2003 season.
 
There's also the time Jr tweeted out a picture saying Dover was getting lights and it turned out to be catch fence supports
