I am finally back to the forum. This recipe is for cutiepie24.
SWEET POTATO CORNBREAD

1 medium size sweet potato
2 egg carton eggbeaters...or 2 eggs
11/2 cups fat free buttermilk
11/3 cups cornmeal
1/2 cup flour
2 teaspoons baking powder
1 teaspoon baking soda
3 tablespoons sugar
3 tablespoons butter

Stir all dry ingredients together...and then blend in butter
Microwave the sweet potato until done
Mash sweet potato and whisk in eggs and buttermilk
Add the sweet potato mixture to the dry ingredient mixture until blended

Pre-heat a 9 in. cast iron skillet and swirl a little butter around in it until coated.
Bake cornbread mixture in the skillet at 400 degrees for approx 35 minutes or until done.
Goes great with homemade bean soup...and I have several simple recipes for bean soup. :)

I guess that no one else around here actually does any cooking.:) It must be nice to eat out at fancy restaurants all the time. :laugh:

I cook every day of the week........I have a ton of recipes that I can post, it would be nice to have a thread exclusive just for recipes..maybe muggle and I could moderate it..(hint, hint) :beerbang: :D :D

Beef mushrooms Dijon
1 pound boneless beef sirloin steak, 3/4 inch thick
2 tablespoons vegetable oil
2 cups sliced mushrooms
1 medium onion, sliced
1 can (10 3/4 ounce)condensed Cream of Mushroom Soup
1/2 cup water
2 tablespoons Dijon style mustard
4 cups hot cooked rice

Slice beef into very thin strips. In skillet over medium high heat, heat
half the oil. Cook beef in 2 batches until browned, stirring often. Set
beef aside. Add remaining oil. Add mushrooms and onion. Cook over medium
heat until tender. Add soup, water and mustard. Heat to a boil. Return
beef to pan. Heat through. Serve over rice or egg noodles. If desired, garnish with fresh chives.

Ok everyone, this is it. Due to the great demand :) this will be the "Recipe Thread". Feel free to post your favorite. :tongue: Or at least ones that are pretty good.

For those who love quick desserts, here's my favorite cause it's the quickest and tastes just like a cheescake.

1 8oz package cream cheese
1/4 cup splenda/sugar
1 stick unsalted butter
1 tsp vanilla
Soften butter and cream cheese at room temperature. Add vanilla and splenda. Mix until smooth and will blended. Line a cookie sheet with wax paper and place 1/2 teaspoon dollops on paper. Freeze. Yum!

1 bottle of Jack Daniels
Any size container of Coke
Ice cubes

Pour in a small amount of Coke, put in a few ice cubes. Then pour Jack over the ice to allow it to evenly mix with the Coke. Stir slightly and consume.

This is one of my favorites.........Corn Pudding

2 11oz cans of corn - I like the green giant
11/2 tablespoons flour
3 tablespoons splenda
2 egg carton eggbeaters
1/2 teaspoon salt
3/4 cup milk - I use vanilla soymilk
3 tablespoons butter - I use Take Control for baking

Blend all ingredients in a Cuisinart for 10 seconds at high speed
Pour into a greased baking dish - for best results use a dish about 8 in. sq.
Bake at 375 degrees for approx 45 minutes or until done

Serves about four.
 
Not your usual Meat Loaf

1 1/2 T packed brown sugar
1/2 C cranberry sauce
2 eggs
3 T finely chopped onion
1/2 C milk
1/4 t thyme
1/8 t sage
dash nutmeg
1 t salt
1/4 t pepper
2/3 C breadcrumbs
1 1/2 lbs. lean ground beef

Preheat oven to 350

Stir brown sugar & cranberry sauce together until smooth. Place in bottom of loaf pan.

In a bowl, combine eggs, onion, milk, thyme, sage, nutmeg, salt & pepper. Stire in bread crumbs. Add ground beef & mic thoroughtly. Shape into a loaf & place on top of cranberry misture. Flatten so loaf will sit level when inverted.

Bake 1 hour. Let cool 10 minutes, then invert onto plate.


Really different. :)
 
Marinade for beef, pork or chicken

1 cup of dry red wine
1/2 cup of honey
3 tablespoons mustard
1/2 cup of olive oil
garlic cruched to taste
If you like the Chinese taste, add some teriyake sauce.

Mix well, put in a zip lock bag, add meat, seal, knead well nd refrigerate over night.
You can chicken fry it, broil it, or BBQ it.
Tastes wonderful, and very tender.
 
Here is a favorite that is perfect for those cold days we've been getting a lot of.

BACON POTATO SOUP

1/2 c. diced bacon
1 med. onion, chopped
1 1/2 tbsp. flour
3 c. chicken bouillon broth
3 med. potatoes, diced
1/2 c. sour cream
1 c. sharp cheddar cheese
Parsley

Saute bacon until crisp. Add onions, cook until tender. Stir in flour until smooth. Add broth and potatoes. Cook about 1 hour until potatoes are done. Add small amount of broth to sour cream, then add sour cream, cheese and parsley to soup. Cook until cheese melts.
 
My very favorite Clam Dip
I carton of soft whipped Philly.
1 can of chopped baby clams
Crushed garlic to taste
1 tablespoon Worchestershire sauce
The juice of 1 lemon.(if it's a BEEEEG lemon, use 1/2 of it. LOL)

Put it all in a bowl, use a fork and mix well. Leave it some lumpy. Refrigerate overnight to allow the flavors to blend and YUMMMMMY!!!!!!

;) TRL, that bacon, potato soup sounds yummmmy!!!!!
That even sounds good for tonight. I have all the fixin's too.
Use that same receipe and add baby clams to it.
You can use potato flakes to thicken the soup too. that's good.
Chop up some celery and some carrots really fine and add it to the pot!!
 
Tonight I am having EGGPLANT PARMIGIANA with pasta and sausage for dinner.
I will also have some Columbia Crest Merlot to accompany the meal.

Tomorrow morning for breakfast I will have the leftover EGGPLANT PARMIGIANA layered on a wedge of Polenta that I will make tonight and refrigerate overnight. I will re-heat the layered polenta and eggplant parmigiana in the oven. :)
 
Do you bake or fry the eggplant? Do you use seasoned breadcrumbs?
If anyone wants a recipe, just ask Kat. If I have it, have made it, etc, I'll be happy to share :)
 
I fry the eggplant a little first and then bake it. This morning I will actually heat the eggplant and polenta in a frying pan and have it for breakfast. :)

Post your recipe for eggplant Kat.
 
This is just from an older ladie's memory bank.

1 Fresh eggplant, sliced about 1/4 inch. More Eggplant if you want.
fresh leamon.
As you slice the eggplant, squeese leamon over it to help prevent air brown rash as with any fruit that is NOT citrus.
Soak slices in salted ice water to remove "bite" then drain.
More leamon.
In the meantime, whisk 1-2 eggs then dip sliced eggplant.
Bread slices is a sep. bowl using seasoned breadcrumbs (I like the parmesan & italian).
In a large, seasoned cookie pan, heat enough olive oil to coat bottom (In the oven set at 350 degrees)
place breaded eggpant slices with a bit of space between them in warmed pan and bake turn, and top with grated parmesan when almost done.(I play it by instinct) until done.

Your choice of sauce, heated, if you so desire.

Serve and enjoy!

BTW, leftovers can be frozen for a later date.
 
Easy Beakfast Biscuits

1 Tablespoon plus 2 teaspoons sugar
1/3 cup. sour cream
1/3 cup club soda
2 cups Bisquick

Mix together the sugar, sour cream and club soda. Stir into the
Bisquick until mositened. Knead 10-12 times; roll out on floured surface and cut into biscuits. Bake in preheated 450 degree oven for 16-18 minutes
 
Lemon Jello Cake

Pre-heat oven to 350 degrees.
Spray 13X9 rectangular pan with non-stick spray. (can use 10 1/2X14 3/4 for thinner cake).

Combine in large bowl:
1 Pkg. Lemon Cake Mix
1 6oz. Pkg. Lemon Jello
3/4 C. Corn oil
3/4 C. Water
4 Eggs

Beat on medium for 1 1/2 - 2 minutes. Pour into pan.
Bake at 350 for 35-40 minutes, or until cake starts to pull away from the sides of the pan. Look for uniform cake height.

While cake is baking, combine: (easiest to use cup or jar with lid and shake).
6 Tablespoons lemon juice
2 cups powdered sugar

When you take the cake out of the oven, poke holes in the cake with a fork, while still hot. Holes should cover entire cake.
Take lemon juice/sugar mixture, pour over cake and spread evenly with spatula.

After the cake cools, refrigerate until cake is cold.

Enjoy.
 
Recipe
1 pd.hamburger meat
1 can of corn (drained)
2 cans of diced tomaotes
1 tsp. of sugar
1 pk. of taco mix
1 pk of cornmeal mix

Brown hamburger meat, then
Mix all together (except cornmeal)
Pour into greased casserole dish.
Mix cornmeal and pour over top
Bake at 350 until cornbread is done.

Note: You can add sharp cheddar chesse, peppers, or anything you would want.


Cream Cheese and Peanut Butter Cookies

Ingredients:
8 ounces cream cheese
1 pint heavy cream
2 tablespoons sugar free peanut butter
1 package sugar free instant pudding mix chocolate

Directions:
Cream the cream cheese then add remaining ingredients.

Spoon onto a cookie sheet lined with parchment paper.

Alternatively, you can spoon into a ziploc and cut off the corner. Use as a pastery bag to make the cookies resemble Hersey Kisses.
