Smoking!!

Getting ready to go on vacation next week, we've rented a house at the shore. Vacation means eating well without having to cook, but restaurants every meal are too expensive and the food can't compare to home cooking.

Anyways, in preparation the wood smoker is all fired up today!! Got a whole pork shoulder, a beef brisket, some andouille sausage, some homemade boudin sausage and a big ol' salmon fillet cooking away oh so slowly!!

Ain't nothing finer!!:D
 
That sounds mighty delicious HardScrabble.:chef: I do believe that you will be eating like kings on your vacation. Wish I could be there to taste test it for ya right off the smoker.:)
 
It's a dang good thing you didn't post your location in your profile or I'd be on my way with a plate or three. I consider myself somewhat the master griller. My waistline shows it too. Have fun on your vacation, and send any leftovers to me in care of Racing-Forums. I'm sure Paul would forward them right along....

Southern Jersey. It's close so all the kids and grandkids can come down.

Will have the laptop, but have had some connection problems with dial-up numbers there in the past.

TWF!! Would love to have a grill-off with ya sometime! They are great cause even if ya lose that only means ya get to eat better cookin'!!

When I first moved up above the Mason Dixon a few years back went lookin' for charcoal one January day and found much to my dismay that none was to be found. It wasn't in season or some such thing. Finally talked a guy at a hardware store into going into the basement storage area of his shop. I bought his entire leftover inventory!!!:D
 
HS, I don't know exactly where you're at, but I do know that we're in the same state. I'm leaving tonight to drive down to SC for my vacation. Just tell me where and I'll be stopping by fer mah "travelin plate". Hope ya have a fun and safe vacation!!

HS, I didn't know it was possible to lose a grill-off! Like you said, you're still gettin some good eats either way. Try some grilled frog legs some time...they're so good that if you put one on your forehead your tongue will beat your brains out tryin to get at it!

Wow, HS. I sure am jealous! My smoker has been in my folks' garage ever since I moved back to the city three years ago. The last time I used it was when I was dogsitting for them one weekend last year. Smoked a pork shoulder as the Hassidic neighbors' young children observed. They kept saying how good it smelled. I didn't have the heart to tell them it was pork. Didn't offer any samples either. :eek:

You can actually buy lump charcoal in the Akropolis meat market in my (very Greek) neighborhood. It'll cost you $8.00 a bag, but at least you can get it. That and a little hickory will turn swine into a feast for the gods.

Sooooo very jealous, still. Have a great time on your vacation! Personally, I hate Jersey, but lots of people seem to enjoy the shore. Maybe they're all carting around loads of tasty, smoked meat too. ;)

Jersey ain't my favorite place, but the shore's not bad. Plus anywhere I can get away with the grandkids is very cool for me! We get a place there every year so the whole family can come down and relax for a spell.

Using a combination of lump charcoal, hickory wood, and pecan wood today. Sometimes I use other woods, depends on what I can get my hands on.

Frog legs are mighty tasty out of the smoker, as is snapping turtle if you can find it. One of my all time favorites is dove breast. Wrap about 30 or 40 of 'em in a pork skin to keep 'em moist.

The sausage and salmon is done, the brisket and shoulder oughta be ready in about an hour!!
 
Frog Legs alone don't sound good. But hey, I haven't tried them so I don't know.
 
To be honest, I'm not a big fan of the non-traditional meats. I've had froglegs twice -- once at a Cuban/Jamaican restaurant, and once at a Thai restaurant. Neither tasted too terrible -- the Thai version was actually pretty tasty -- but I can't seem to get past the fact that I think it's incredibly gross. I won't even consider trying a snapping turtle or a dove. Hell, I was a vegetarian for five years. I'm still not completely comfortable handling chicken and beef. :sketchy:

To me, nothing tastes better than smoked pork! I have to agree with Emeril that it's one of the tastier meats, when cooked properly. Smoking it is just perfect. Kansas City style ribs, Carolina pulled pork, Andouille sausage and a thick, jerked (Jamaican) pork chop. How about that Andouille in a big plate of red beans & rice? Ain't nothin better than that! :lovewow:

Too bad I'm sitting here eating a lousy bowl of Lipton soup. :rolleyes:

Who showed ya how to make Boudin. You sure you ain't from La.? And you have Andouille? That is hard to come by too for most folks. I use my smoker all the time.
Frog legs taste like chicken for ya'll who haven't had any.
 
Some years back I worked a project in Beaumont, TX. Got my first taste of Boudin form a little company there that made it on the premises. Bugged the poor folks until they gave me a recipe and general instructions on how to make it. Experimented with for a long time and finally got it right!

There is only one place up here that has Andouille, and they don't have it all the time. When they do I buy a case or two. I must say it's not as good as some I've had down LA way, but it's good none the less.:)
 
This Jewish, not Kosher eatin girl, would like the briskit first, then please bring on the rest. Snake is good too, tastes like chikin.
Please save me a plate with potato salad, veggies and everything else.... mmmmmmmmmmmmmmmmmmmm
