(I don't like cottage cheese, so I substitute Mozzerella.)
1 pound + ground beef
16 oz can diced tomatoes
1 package taco seasoning mix
1 can (2.8 ounces) French's Fried Onions
12 oz cream style cottage cheese
8 oz shredded cheddar cheese
2 eggs, slightly beaten
12 flour or corn tortillas, 6" size
1 medium tomato, chopped
1 cup shredded lettuce
1/2 cup diced onions
seasonings to taste
Preheat oven to 350. In a large skillet, brown and drain ground beef with seasonings. Stir in canned tomatoes and taco seasoning. Reduce heat, cover and simmer 5 minutes. Remove from heat and stir in HALF of the Fried Onions.
In a medium bowl, combine cottage cheese, HALF of the cheddar cheese, and the eggs, set aside.
Overlap 3 tortillas in the bottom of a greased 13X9 baking dish. Overlap 6 tortillas around the sides. Spoon beef mixture over tortillas, top with remaining 3 tortillas. Spoon cheese mixture over top. Bake, covered, for 45 minutes or until cheese mixture is set. Top with remaining cheddar. Sprinkle remaining fried onions down the center of the casserole. Bake, uncovered, 5 minutes or until onions are golden brown. Remove from oven. Just before serving, arrange lettuce, tomato and diced onions around the edges and let stand 5 minutes.
