No other sport that I know of seems to draw as much fan interest in the business side of things than NASCAR. Why is that?
Good topic.
Few other sports are as dependent on sponsorship, at the league level or for the individual teams. When your favorite driver's continued participation depends entirely on getting a name on the hood, you become interested in whether someone will step up.
With that said, I'm interested in the sustainability of the top series, and in the continued distribution of the video / broadcasts in a reasonably affordable manner. I think my concerned interest ends there.
I care about NASCAR and racing in general much more than I care about other sports. With that said I don't actively seek out this information, but rather it seems more readily available. That's my perception, my often skewed perception.
I have got to get me some of these young people everyone keeps talking about.... In reality the only problem is that young people are not interested as if they are present most other issues will vanish.

Fans of other sports are interested in the financial aspect of said sports just like NASCAR, but in different ways.

I seriously have no clue what they like. 'Edgy experiences' over material goods, but I'm just not sure which 'experiences'. Military boot camp?

I dunno about picnics, but I spent most of Independence Day morning birding at a local wetlands trail. I also dunno is seeing only seven relatively common counts as an 'experience'. but I had a good time.I am not exactly sure what young people like but I do know that a lot of them like to be able to converse when they gather, good WiFi is an absolute must and having a commons area where they can congregate is also big. The only thing I know about being edgy is if I have not had enough coffee and IDK what an experience is in the eyes of a youngster. I had the company of a lovely female companion yesterday and we had a picnic at a state forest/conservation area and took in all the sights and sounds and for me that was an experience. I wonder if people go on picnics anymore?
For me the NHL has so many moving parts and a lot to keep track of behind the scenes if you are interested. A new team will begin play this year so there was the expansion draft, in addition to free agency, trades, rules changes (the NHL doesn't change them weekly), the waiver wire, cap implications of player contracts, new arenas, expansion cities and a lot more.
I think part is of the problem is how Nascar success is reported. Reporters like headlines and very few care enough to report true facts. To say viewership is down is a fact ONLY in how they obtain the numbers. If they could actually count the number of people actually stopping by every 5 min. for an update the viewers numbers would increase immensely and now you would have the missing age group.
