Thank goodness we got that race in today. And congrats to Jeff Gordon. Once again...Try not to make this too much of a habit, Jeff. :D

Three weeks of cooking special meals for race day, and I think this one is my favorite. Looks plain enough, but trust me, plenty of time and effort went into this. Everything homemade except the pickles. Tasted pretty damn good, if I may say so myself. :thumbsup:

Pulled pork sandwiches with vinegary barbecue sauce and cole slaw on kaiser rolls

Macaroni and Cheese
Kansas City Ribs

Get it...Richmond Ribs?

One of these days, I will get a life. Until then, I'll continue to provide these thrilling menu updates to all of you. :)
 
Guess I shouldn't complain.......I had BBQ too!!:D

A little Bud Light to go along with it, too!!:)

But your's still looks better than mine.......suppose that's because it was homemade?;)

What dressing did you use for the slaw?

I used the same recipe from Bon Appetit: bbq sauce & mayo. It's supposed to taste like the meat you're eating it with. Worked quite well, but I wouldn't eat it on its own. The rolls came out perfect.

Sorry, but next week's menu is pretty much a lock. And I've had my fill of seafood for a while. It's a porkfest around here for two weeks straight! :D

On to Richmond, my second favorite race...

where did ya get the cole slaw on the pulled pork sandwich deal from. The only place I know off top of my head that does that is the mid-south, Memphis in particular. It is great, ya just don't see it that often.

Now a big ol' glass of very sweet iced is required with any BBQ, IMO.

a Kaiser roll?? Reckon southerners know what that is? LOL.

Looks great ans would wager it tastes even better!

For Richmond ribs are ya doing country, spare, or back ribs?
 
HS: I've had pulled pork sandwiches with cole slaw on top all over the South -- North Carolina, Tennessee (Pulaski, Memphis, Nashville, Pigeon Forge), and, I think, Georgia. They always seem to be served that way, that I've noticed. I guess at some places, the cole slaw is optional on top. I always get it that way. :)

I have to say, this batch made with the stovetop smoker actually came out quite nicely. Didn't have to use a fork at all. It just fell apart in my hands. And the smoky taste wasn't overpowering, like it was when I smoked some chicken that one time. I guess pork is strongly enough flavored to handle it. But this stovetop smoker deal is a definite good idea for anyone who does not have access to a real, outdoor smoker. Between that and my cast iron grill pan, I can actually pretend to be eating real barbecue.

BTW, I made kaiser rolls because I wanted something sturdy enough to stand up to its juicy contents. I know soft hamburger buns are often used, but I prefer to make things very complicated. :D

Richmond ribs? Hmmm, should be spare, but maybe babyback would be a better idea? They're also going to be smoked...
 
The rib choice is wide open. All the styles can be equally good. I like the country style cause there is more natural moisture in them.

One of the best, if not the best, rib joints is in Memphis, The Rendezvous. They use spare ribs and a dry seasoning with a little bit of mopping. No sauce. They are unbelievable!

Baby Backs are far and away the most poplular now. I think because they are naturally tender and allow less BBQ experienced chefs to produce a mighty fine rib. A good Q'er can produce a fabulous rib with them!

Myself I use dry rub and a mop, neither of which contain any sugar. At the very end I baste with a BBQ sauce of my own creation. Probably preaching to the choir here, but you have to be careful with sugar when BBQ'ing. It will burn too easy. If you can find turbinado sugar it is less likely to burn and tolerates the heat much better.

Any way you go, a good BBQ rib dinner is hard to beat. Cole Slaw, baked beans, and hushpuppies are usually my sides.

BTW, for pulled pork one of the real popular sides back home is Brunswick Stew.

I "cooked"....Lipton chicken flavored noodles, and bisquick garlic cheddar biscuits. It's not "homemade" and it's not "gourmet" but it's CHEAP, QUICK and purty darn good sometimes!!! I prolly won't have the noodles for another 6mo or so, but I sure could live on those biscuits!!! MMMMMMMMMM

I let Frito Lay do my cooking.........BBQ chips and beer!! Cheap and easy and no clean up!!:)
 
HS: Guess I'll buy whatever sort of ribs look best. I've made all three kinds before, but generally avoid the country style ribs because they've always been really fatty, not so meaty. Then again, cooked slowly in a smoker, all that fat would melt away and serve to make the meat more tender. Hmmm, I'll have to consider this some more...

My recipe is from the same issue of Bon Appetit that I got the pulled pork recipe from, and I know it's a good one because I've made it several times already. The dry rub contains a fair amount of brown sugar, plus paprika, salt, pepper, onion powder, and cayenne pepper. You're supposed to douse the ribs with KC Masterpiece bbq sauce afterwards, but that seems like such a copout. Might have to come up with another recipe for that. I made a sauce with Jim Beam in it once, but it was rather strongly flavored. I'll keep looking.

I am aware of the fact that sugar burns quickly when barbecued, and I avoid putting sauces on while cooking over a flame for this reason, but this whole smoker deal is self-contained, so that isn't an issue. Good tip about the turbinado sugar, though, thanks! Will have to keep that in mind if and when I ever move out of Cement City and have a real barbecue again. :rolleyes:

Hey take a pic of that smoker for me. I have never seen a stovetop smoker before. That must be a city thing.:)
 
That's not only a city thing.......they have them for gas grills!!:) Ooops, maybe those are city things too!!:)

by the way he compliments me everynight..but it would be nice if he did it here since he spends so much time on here..:) :)

your not butting in..be my guest..........my husband walked into the kitchen all by himself and got his chips and beer, guess he thought it was funny to post it..thought it was funny at the time........oh well..............I am not mad, not upset.......not mad at him, not mad at you......:D
